Sesame seed has a nutty, slightly sweet flavour that makes it a very versatile ingredient, it can also be ground into a paste (called tahini). It is often used in baked goods, sushi rolls or as a garnish for salads. Because of the high oil content, sesame seed turns rancid quickly. It can be stored in a cool dark place for up to three months, refrigerated for 6 months and frozen for a year.
