Chinkiang is a black rice vinegar from the eastern Chinese city of Zhenjiang - also known as Chinkiang. This vinegar has smoky notes which makes it a great addition to any meat dishes or dipping sauces.
The acidic and slightly sweet vinegar is good for cutting through fatty dishes, it will also give bland dishes an extra hit of flavour and complexity.
