Dried shellfish is used as a flavouring in many Asian dishes. Dried shrimp has a strong fishy taste and can be used whole, chopped or ground. Use as an addition to soups, stuffings, stir-fry and noodle dishes. For most dishes the shrimp will have to be reconstituted in warm water, this water can also be added to the dish for flavour.
Dried shrimp is used extensively with chillies and Thai herbs to produce various types of chilli and Thai curry pastes.
Stick it in the cupboard, put in an airtight container after opening.
