Kombu is a very popular Japanese ingredient. It is a long dark seaweed which after harvesting is sundried and folded into sheets. It has a natural white powder covering that delivers a large amount of flavour. For this reason, it should never be washed but only wiped with a damp dishcloth before use. Kombu is used to flavour various Japanese recipes, such as soups and stocks, as well as sushi rice. It is one of the main ingredients for making your own dashi.
Stick it in the cupboard, seal package tightly after opening. Keep in a cool dark place.
