Sesame oil comes in two basic types. Light sesame oil which is light in colour and flavour, ideally used for salad dressings and sauteing. The darker Asian sesame oil has a much stronger flavour and aroma. Sesame oil is high in polyunsaturated fats and its average smoke point is very high (210 degrees Celcius) making it an excellent medium for frying.
